(...It's soft, at least for the first two days. (Uh, we never get past day two.) I wish I knew more about caramels and cooking times. I'm guessing the higher the temperature the harder the caramel gets (since cooking past the "soft ball" stage puts the caramel in the "hard ball" stage, at least that's what my candy thermometer tells me.)
