I'm a sucker for cornbread. This is an easy recipe, adapted from "Favorites: A Collection of Favorite Ivory Family Recipes". I halved it and added wheat flour.
1/4 cup butter, melted
2/3 cup sugar
1/2 cup buttermilk
1/4 teaspoon baking soda
1 cup corn meal
1 cup whole wheat flour
1/4 teaspoon salt
Preheat the oven to 400 degrees. Grease a bread pan and mix the ingredients together in a bowl.
Pour the mixture in to the bread pan and bake for 30 minutes.
Cool, cut and serve. Good on its own, or with butter and honey.
