Black Beans

I am still looking for that magic black bean recipe. I kind of think it has lard in it. Until I find it, this will have to do.


2 cans black beans
3 cloves garlic, minced
1 Tablespoon olive oil
1/2 onion, diced
2 bay leaves
sea salt and pepper to taste
hot sauce (optional)

In a saucepan, heat the oil. Add the onions and cook until transparent. Add the garlic and saute for about a minute.

Add the black beans, including the liquid from the beans. Also add the bay leaves and sea salt. Simmer until the liquid has reduced to a thick sauce. (I simmered on the lowest heat for several hours.)

Adjust salt and add pepper and hot sauce to taste.
