Potato Salad



This is a true story.

Niall: Are you hungry?
Me: Yes.
Niall: What would you like to eat?
Me: I don't know. Maybe a tuna sandwich with pickles?
Niall: Um, I want potato salad. Could you make it for me please?

Ingredients

4-5 medium sized potatoes
4 eggs
1/2 cup mayonnaise
1/4 cup mustard
2 Tablespoons dill pickle juice
4-5 dill pickles (we used sweet pickles, dill are so much better)
5 green onions
1/2 teaspoon celery seed
salt, garlic powder and pepper to taste
Paprika as garnish (optional)


Wash and dice the potatoes into bite size pieces, leaving the skins. Boil the potatoes until soft, about 15 minutes. Hard boil the eggs, also about 15 minutes.


Wash and chop the green onions and chop the pickles as well.


When the potatoes and eggs are done, allow them to cool. (I rinsed in cold water.) Peel and chop the eggs.



Mix the mustard, pickle juice and mayo together. Add the celery seed and seasonings.


Combine the potatoes, eggs and dressing. Add the pickles and onions and fold until everything is combined. Adjust seasoning as needed. Add the paprika as garnish, cover and refrigerate the salad for several hours until cool.
