We had some leftovers and, since I love leftovers, they needed to be used.
1 cup mashed potatoes
1 zucchini (courgette), grated
1/2 onion, diced
salt and pepper to taste
1/2-1 teaspoon basil
Bread crumbs (or Triscuit crumbs in our case)
Preheat the oven to 350 degrees F. Grate the zucchini.
Grease a casserole dish and put the mixture in the dish. Cover with bread crumbs (or Triscuit crumbs.) Bake for 30-35 minutes.
Remove when the baked and browned on top. Let it cool for a few minutes before serving.
